Take your camping up a notch! (…with veggies!)
I would like to dedicate this post to one of my blog followers, Natasa. She has been asking me about some healthier meal ideas for camping. When we think of camping, we all think of the outdoors; long hikes, camp fires and an opportunity to disconnect from our busy lives.
But keeping well fuelled is very important to enjoying your camping experience, and so today I’ve posted some cool recipes and ideas to diversify mealtimes while camping…incorporating some veggies of course!

Beer Steamed Potatoes: Love beer? You’ll love this recipe which only uses four ingredients and a camp fire.

Eggs on the Grill: Do you want a less-messy way to make eggs on the grill? Use a muffin pan so that you can make 12 different omelettes in one shot? Perfect for picky eaters. Don’t forget to add some chopped peppers, onions, or zucchini!
Omelet in a Bag: Another way to make personalized omelettes, add all your favourite ingredients for an omelette to a Ziploc Zip and Steam Bags and add to a pot of boiling water for a mess-free breakfast!

Grilled Vegetables or Meat in Aluminium Foil “Hobo” Packs: This is a very versatile way to make a wide variety of meals over the camp fire. Basically, you have to create an aluminium foil pouch and add your favourite veggies, protein and a dollop of oil. Seal, leaving the sides open slightly to steam and toss over hot coals to cook. You can even prepare the packs before you leave for camping so when you get there, all you have to do is toss it on the camp fire to cook.

Corn on the Cob with Various Topping Ideas: Think butter is all you can add to a sweet corn on the cob? Think again with these recipes.
Crudites or Sliced Vegetables: Peel and slice a couple of carrots, a head of cauliflower and some grape tomatoes for some veggies at any time of your camping day.

Grilled Banana Boats: This recipe is simple: slice open a banana and place on aluminium foil. Stuff with your favourite toppings such as chocolate chip, marshmallows and peanut butter. Seal in aluminium foil and put over hot coals. Let cook for about 10-15 minutes and enjoy!

Apple Pie on a Stick: A healthier option to an apple pie, this recipe involved cooking a peeled apple on a skewer over a camp fire and dipping in a mixture of cinnamon and sugar before enjoying!
Homemade Cinnamon Apples: This recipe involved coring an peeling an apple, stuffing it with tamales candy and wrapping it in aluminium foil before cooking it over the camp fire.
Muffins in an Orange Shell: Simply take a dry muffin mix, add water and spoon into half orange shells (flesh removed). Wrap orange shell in aluminium foil and place directly over hot coals to bake.
